Brian and the team at Le Chardon d’Or are honoured to announce on Thursday the 23rd of January 2020, we welcome host Giles Cooke MW, the founder and winemaker of the Thistledown Wine Company to showcase a selection of wine from his Australian born, multi-award-winning portfolio.
Giles has travelled the world buying wine and creating engaging new products. But something has always drawn him back to Australia, where much of his early travel in the wine trade was done. As well as passing the MW exam at the first attempt, Giles has winemaking experience in Spain, California and Australia; along with extensive consulting to wineries on wine styles and packaging.
Giles Cooke MW and Fergal Tynan MW, with the helping hand of Peter Leske, hand-make small-batch wines that
illustrate the benefits of great sites and intelligent winemaking. From their base in the idyllic Adelaide Hills, they work with pristine fruit sourced from iconic vineyard sites.
Thistledown Wines work closely with select growers in South Australian regions; from the Barossa & Clare Valley’s, to the famed McLaren Vale. They deal only with growers who are committed to viticulture that allows the fruit to freely express itself. This means using grapes from vines with relatively low yields. This enables concentration of flavour and facilitates slightly earlier harvest.
“It's become the norm in some regions to give the grapes extended hang time and to look for fruit sweetness and
ripe flavours in the vineyard. We prefer to work with fruit that still has great balance of sweetness, acidity and tannin –
fruit that we pick "on the way up rather than on the way down".”
Upon tasting a selection of their wines, Brian has designed a delectable four-course menu to complement. Join us, for what promises to be a fabulous evening of fine wine and food; beginning at 7 pm and including introductions of the featured wines from our host Giles and food matches by Brian; followed with tea & coffee.
