Mar 2009: Recipe of the Month
"I don’t have a signature dish as such, there are too many good Scottish ingredients to be able to pick just one dish. Plus we change our menu every six weeks to keep it fresh for our regular customers and to make best use of seasonal produce. There are certain dishes on the menu that feature regularly such as sirloin steak which is delicious with a Roquefort cheese sauce as in this recipe."
First, season the beef and fry in a hot pan to an even colour, then place in a pre-heated oven at 200°C to cook to preference, remove and rest for 10-15 minutes.
Next thinly slice some peeled potatoes and place into a bowl, cover with the cream, season and mix well. Place the potatoes evenly into a small dish, and bake in the oven at 150°C. Every 20 minutes press down – do this 3-4 times. Bring any leftover cream to boil and reduce to a thick paste. When ready to serve, put the paste over the potato and grill until golden brown.
Now boil some green beans in salted water for 5-6 minutes, refresh in iced salted water, then drain and refrigerate. Peel and some slice shallots, fry lightly in oil, and add the green beans to reheat before serving.
Crumble the Roquefort over the steak and grill until cheese starts to melt, then serve. If you find Roquefort too strong, any strength of cheddar also works well.
