A Taste of fine dinning in Scotland
Brian Maule is one of Scotland’s finest chefs. Having trained under the Roux Brothers at Le Gavroche, arguably the most famous Michelin star restaurant in the UK, Brian understands how important a role model is when starting out in a career in the restaurant business.
Brian truly believes that a large part of his success is due to his mentor Albert Roux, with whom he worked with for fifteen years. Therefore it was a natural progression for Brian to embrace the concept of Culinary Excellence.
Developed by Glasgow District Council and education services, Culinary Excellence was developed to help prepare school pupils to work in the hospitality industry. The programme is now in its 7th year at Chardon d`Or.
Over a 12 week programme starting on 9th September, 14 pupils from Lochend Secondary School in Glasgow will take it in turn to alternate between working in the kitchen with Brian or front of house with the Restaurant Manager. The pupils will be trained to the highest standard of fine dinning hospitality and experience first hand this level of precision in a live environment which brings to life the work they carry out in the classroom.
The school pupils will be split into two groups, half focusing on the skills & techniques required to keep the front of house in the restaurant running smoothly while the other half dived straight into the frying pan as they learned how to run a professional kitchen.
At the end of the culinary excellence course, the pupils prepare and serve up a mouth-watering lunch at the West Regent Street restaurant.
Brian, said: “It’s extremely rewarding to see young people that you have introduced to the hospitality industry at school age come through the ranks and go on to work with us here at Chardon d’Or. I wouldn’t be here today if Albert Roux hadn’t spotted the potential in me to be a great chef and I just want to give something back to the young people of Glasgow.”
