Warm Chicken and Parmesan Salad with White Truffle Dressing

Serves 4

2 x Chicken fillet 160g mayonnaise
80g Parmesan 20ml White truffle oil
2 x Spring onions 30ml Double cream
2 x Tomatoes salt
20ml Vinaigrette
Cut the chicken into even sized strips. Pick wash and dry salad.
Take parmesan and make shavings with a speed peeler, then grate the rest for a crisp.
Take a tray and a mould and place a little parmesan in the mould to make a nice
circular shape, then place at the bottom of the grill. Cook slowly until golden in colour.
Take off the tray, let cool and keep in a safe place.
Clean and chop the spring onions.
Core and score the tomatoes and place in boiling salted water for about 10 seconds,
take out and place in salted iced water for about a minute.
Take out the water and peel and cut into four then deseed. Dry in a paper towel, then
dice evenly.
Whisk the mayonnaise. Add white truffle oil, add double cream and season. If too thick
add a little water.
Take chicken, season and fry off quickly in a hot pan.
When dressing the plate, place dressed salad in middle of the plate, chicken around,
shavings on top, spring onions and tomato around and over the chicken.
Drizzle dressing over and around, then place the galette on top.
